Blini – Russian Pancakes

These bite-sized cushions are the perfect receptacles for sour cream topped with glistening caviar or salmon curls.





3 eggs
¾ cup buttermilk
1 cup milk
1 cup plain flour
¾ cup buckwheat or wholewheat flour
1/4 teaspoon baking powder
⅓ teaspoon salt
½ cup butter

To serve

Sour cream or crème fraîche
Caviar or smoked salmon


In a bowl, whisk together the eggs, buttermilk and milk.

In a separate bowl, combine the flours, baking powder and salt.

Add the flour mixture to the egg mixture and whisk again.

Heat a non-stick frying pan and grease well with the butter.

Pour 1 tablespoon of batter per blini onto the pan and cook for 11/2 minutes till bubbles appear around the edges Flip over and cook the other side as well.

Cook 4 or 5 blini at a time, greasing the pan with butter each time.

Serve with a dollop of sour cream or crème fraîche, and topped with caviar or a thin roll of smoked salmon and a sprig of dill.

Makes 48 blini

Note: You can also make thin crêpes with the batter and top with sour cream, honey or jam.
